Flavoursome new venture for top Cambridge chef

Mark Poynton is leaving Alimentum to start his own city centre restaurant.

Mark Poynton has confirmed that he is leaving his role as head chef at renowned Hills Road restaurant Alimentum after nearly a decade to launch his own venture in central Cambridge later this year.

The website for his new business, MJP Restaurant, outlines the concept as: “Simplicity, flavour, seasonality.”

Mark said: “I want to do something that’s a bit more open to the customers, so I’m going to start a restaurant from scratch, using social media to show the pitfalls of that and obviously the good side, which includes the whole process of finding a site, setting it up, hiring staff, buying plates and cutlery – everything you can imagine.”

He continued: “I’m going to try and take away some of the stigma in restaurants and hospitality, for example service charge – we’re not going to add a service charge at all.”

Mark, originally from Chester, is adamant that there will be no hidden costs and that the restaurant – for which he has yet to find a location – will cater for everyone.

“We want it to be simple, but flavoursome and delicious plates of food,” he said, “so we’re going to try and structure it where there’s starters, fish courses, meat courses, and vegetarian and vegan courses – and those latter three will all be available as main course size or intermediate size. It gives the guest the opportunity to have what they want and not be dictated to.”

He added: “What you see is what you get, and we’ll welcome feedback from the guests as well. It’s going to be an ever-changing menu.”
