Bread By Neil microbakery brings the magic of sourdough to Ely




Bread By Neil, a new microbakery, has opened in Ely with the aim of bringing the magic of sourdough to its customers.

The start-up, run by bread boss Neil Adcock from his converted kitchen and back garden in Back Hill, launched earlier this month.

Neil said: “I’ve been baking as a hobby for 20 years and have a special affection for really good sourdough.”

Passionate about quality, he has been refining his recipes for the past year and has shared the highs and lows of the baking business via Facebook.

Neil has previously worked as a research scientist, philosopher and graphic designer, all in the Ely/Cambridge area, and is now turning to his first love and, wherever possible, is using local and organic ingredients.

Neil added: “It’s not just about taste, though. Sourdough is bread in its oldest and simplest form, made from three simple ingredients – flour, salt and water.

“There are no hidden additives and the length of the process results in bread that is nutritious, digestible and with a lower glycemic index than standard industrially-produced bread.”
