Celebrate Shrove Tuesday with one of Cambridge's finest pancakes
The Cambridge Cookery & Bistro on Purbeck Road, Cambridge, presents the recipe for their hugely popular pancakes.
Beloved by the brunch crowd, on this special day, the Cambridge Cookery & Bistro is also serving pancakes with Nutella or lemon juice and sugar.
We asked the team for the secret to a flippin’ great pancake, and here’s what they told us...
Ingredients:
250g Ricotta
140g plain flour
1 teaspoon vanilla paste
1/2 orange, finely zested
2 free range eggs, whites and yolks separated
225ml full fat organic milk
2 tablespoons unrefined Fair Trade sugar
Method:
Keep the egg whites separate and mix all the other ingredients together. Whisk the whites to medium peak and gently fold into the other ingredients. Dollop into a fairly hot non-stick pan brushed with a little clarified butter. Turn after approximately 2 minutes or until golden brown. Fry for another 90 seconds. Stack and serve with your favourite toppings.
Cambridge Cookery & Bistro opens from 9am-3pm from Tuesday to Sunday. It also opens on Saturday evenings, from 6pm-10.30pm. It is closed on Mondays.
