New modern British bistro Margaret’s now open in Cambridge

Margaret’s, a modern British bistro, is officially launching today (Thursday, 12 June) on Cambridge’s Chesterton Road.

Founded by Alex Olivier and Sam Carter, who previously ran the Michelin-starred Restaurant 22, this new establishment will offer a menu that promotes locally-sourced ingredients in a relaxed setting.

Margaret’s will be dedicated to showcasing the same produce and refined cooking as Restaurant 22 but with a refreshing and laid-back approach to the set menu.

Embedded within the local community, the name takes inspiration from a beloved regular and dear friend.

The kitchen will be under the direction of chef-owner, Sam Carter, who will create the seasonal menu, while the dining room will be Alex’s domain.

Opening dishes celebrate the arrival of summer, with highlights including CoFarm crudités with cod’s roe and chilli, tempura monkfish with lemon, ginger and kombu, Norfolk salt marsh lamb rump with green sauce, and peach and almond crumble with meadowsweet custard for dessert.
