The Suffolk restaurant announces two-night residency at Parker’s Tavern, Cambridge
Famed seaside restaurant The Suffolk, led by head chef Tom Payne, will take residence at the University Arms Hotel in Cambridge for two nights, bringing with them a menu of fresh fish and seafood dishes.
Suffolk born-and-raised Tom will take to the stoves of Parker’s Tavern with his team and will work with local suppliers to guarantee the freshest fish and seafood possible.
The residency is the first in a series of collaborations, inviting like-minded culinary institutions from across the region to showcase their ingredients and signature dishes.
The new menu will highlight Payne’s creations, including starters of dressed crab with pickled cucumber and avocado, shellfish bisque, and smoked beetroot tartar with dill sauce.
To accompany, the Parker’s Tavern team have created a specially-curated wine list of seafood-friendly wines, which will be available alongside a small selection of cocktails.

“Parker’s Tavern is a dining room fit for any banquet and we are just so excited to bring our signature dishes to Cambridge.
“The evolution of the restaurant in Aldeburgh has been driven by our connection to the Suffolk coast and its unbelievable bounty.
“Tom and his team are uncompromising when it comes to sourcing the best local produce, cooking it with time-honoured simplicity.”
The Suffolk opened its doors in late 2022. Located in the coastal village of Aldeburgh, it boasts a 60-seat restaurant named Sur-Mer, a rooftop terrace with ocean vistas, a 12-seater private dining room and a wine bar. The establishment also includes six bedrooms.
The restaurant has been featured in the Michelin Guide, The Good Food Guide, Harden’s Guide and in SquareMeal’s list of top 100 restaurants in the UK.
